Cinnamon Buns (Kanelbullar)
Soft, fluffy Swedish cinnamon buns with cardamom-spiced dough and a generous cinnamon filling. Perfect for fika with coffee.
Ingredients
- 500 gAll-purpose flour
- 7 gActive dry yeast
- 250 mlMilk, lukewarm
- 75 gSugar
- 75 gButter, softened
- 1 tspSalt
- 1 tspGround cardamom
- 1 pieceEgg
- 100 gButter for filling
- 100 gBrown sugar
- 2 tbspGround cinnamon
- 50 gPearl sugar for topping

Dissolve yeast in lukewarm milk and let stand for 5 minutes until foamy.

In a large bowl, combine flour, sugar, salt, and cardamom. Add yeast mixture, softened butter, and egg.

Knead the dough for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour.

Roll out dough into a rectangle about 40x30cm. Spread softened filling butter evenly over the surface.

Mix brown sugar and cinnamon, then sprinkle over the butter. Roll up tightly from the long side.

Cut into 12 equal pieces and place in paper baking cups on a baking tray. Cover and let rise for 30 minutes.

Preheat oven to 225°C (435°F). Brush buns with beaten egg and sprinkle with pearl sugar.

Bake for 12-15 minutes until golden brown. Cool on a wire rack before serving.
